We're being DoS'd. Can anyone recommend a good network analyser that won't crash if more than a couple of hundred IP addresses happen to be connecting to your network at any one time???

but it's not much use "analysing" DDoS attacks. You can't do anything and the owners of the (thousands of) boxes DoSing you probably won't care or won't be contactable. Best thing is to sit through it...

Etherreal seems to work nice, and of course going after the users is prolly not your primary move, calling the ISPs with logs, and possibly a lawyer is. While users may remain uncontactable the ISPs will shut down the link fast if they are in violation.
